Esperimenti in cucina.

Noi italiani il risotto lo facciamo proprio con tutto.  Almeno qui nel nord Italia,  dove il risotto e’ una vera istituzione.

Dopo averlo fatto per secoli con carne,  pesce e verdure,  adesso abbiamo iniziato a farlo con la frutta.  Famoso e’ infatti il risotto alle fragole che spopolava negli anni ’90.

Io quest’estate ho provato a farlo con le pesche “tabacchiere”,  quelle pesche a polpa bianca dalla forma schiacciata,  dolcissime,  tenerissime e profumatissime.   Ho seguito la procedura del normale risotto (senza cipolla)  e il risultato e’ stato un piatto leggero e dolce.

Secondo azzardo:  ho comprato senza conoscerlo un melone del tipo Galia,  un ibrido proveniente dall’Asia.  Sorpresa:  la polpa era verde!  Ho chiesto a Google e mi ha detto che il melone Galia e’ un incrocio fra i due tipi Cantaloupe e Honeydew.  Le sue caratteristiche sono:  la polpa verde,  anche a maturazione completa e  il sapore molto dolce con note di banana,  limone e perfino cetriolo.  Tutto vero!



Experiments in the Kitchen.

We Italians make risotto with just about anything.  At least in northern Italy,  where risotto is a true institution.

After centuries of making it with meat,  fish,  and vegetables,  we’ve now started making it with fruit.  Strawberry risotto,  a huge hit in the 1990s,  is famous.

This summer I tried making it with “donut” peaches,  those flattened,  white-fleshed peaches that are incredibly sweet,  soft,  and fragrant.  I followed the same procedure as for a regular risotto (without the onion),  and the result was a light and sweet dish.

Second hazard:  I bought a Galia melon,  a hybrid from Asia,  without knowing it.  Surprise:  the flesh was green!  I asked Google,  and it told me that the Galia melon is a hybrid between the Cantaloupe and Honeydew melons.  Its characteristics are:  green flesh,  even when fully ripe,  and a very sweet flavor with notes of banana,  lemon,  and even cucumber.  All true!
