Mi e’ capitato di trovare al supermercato in Finlandia questo bell’assortimento di carote di colori diversi; ebbene, la minestra vellutata che ne e’ venuta fuori aveva un colore…ehm…alternativo, insolito, a causa della presenza delle carote viola. Anche il gusto era un po’ meno dolciastro, in certo qual modo piu’ forte, ma sempre buonissimo.
D’altra parte il colore originale di questi ortaggi non e’ sempre stato arancione: fu solo nel secolo XVIII che gli olandesi selezionarono le carote arancione in onore della loro dinastia regnante: gli Orange; precedentemente le carote erano viola, rosse, gialle e perfino bianche.
Carrot pureed soup?? I happened to come across to a variety of colourful carrots in some Finnish markets and I made a pureed soup; well…the result was as coloured, quite unusual, alternative, but the taste was excellent, even though less sweet and stronger than the usual orange-coloured carrots.
On the other hand, the proper colour of these very healthy vegetables has not always been orange: just in the 18th century they were turned orange through selective breeding by Dutch farmers, as a tribute to the House of Orange. Prior to this fact, carrots were violet, red, yellow and even white.
