Carrot pureed soup??         I happened to come across to a variety of colourful carrots in some Finnish markets and I made a pureed soup;  well…the result was as coloured,  quite unusual,  alternative,  but the taste was excellent,  even though less sweet and stronger than the usual orange-coloured carrots.

On the other hand,  the proper colour of these very healthy vegetables has not always been orange:  just in the 18th century they were turned orange through selective breeding by Dutch farmers,  as a tribute to the House of Orange.  Prior to this fact,  carrots were violet,  red,  yellow and even white.

  2. I’m sure the carrot soup was delicious. The different colours of carrots are fun to buy and cook. Thank you for the reminder of the history of carrots which I had forgotten. Happy days to you and yours!
