Buongiorno lettori! Sarei proprio curiosa di sapere che cosa vi e’ venuto in mente leggendo il titolo del post… Se per caso avete pensato che ci siamo portati un qualche gadget natalizio dalla Casa di Babbo Natale…beh, avete indovinato. Anche perche’ abbiamo scelto prodotti di artigianato locale che danno lavoro alla gente del posto.
Ma il souvenir piu’ gustoso che ci siamo portati sono state delle… patate!
Le patate Puikula sono una cultivar unica e tipica dei territori dell’estremo nord: vengono coltivate in Lapponia dal 1700. Vegetano bene in questi territori non solo per le proprieta’ del terreno, ma anche per l’insolazione prolungata durante la stagione estiva. Gia’ nella Finlandia meridionale sarebbero soggette a muffe. Le caratteristiche principali di queste patate sono: la forma che ricorda una mandorla (da qui il loro nome; anche in svedese si chiamano: Mandelpotatis); l’abbondante contenuto di amido che le rende farinose; il gusto fine e delicato.
Le patate Puikula si prestano molto bene alla cottura al vapore. La bollitura richiede una procedura particolare: appena arrivano a bollore bisogna spegnere il fuoco e tenerle nell’acqua bollente ancora per soli 15 minuti, controllando che non si sfaldino: l’elevato contenuto di amido infatti provoca lo sfaldamento. Con queste deliziose patate, molto farinose, ho preparato degli ottimi pure’, come li avevo assaggiati a Rovaniemi. Il gusto delicato di queste patate accompagna molto bene la carne di renna, ma anche il salmone e i pesci che si pescano nelle fredde acque del nord cone il Coregone bianco.
Le patate Puikula coltivate nella Lapponia finlandese sono una specie protetta dall’Unione Europea. Una DOCG che si chiama: Lapin Puikula.

I wonder what came to your mind when you read the title of this post… If you were thinking that we carried home gadgets from Santa Claus Home… ok, you got it! Also because most gadgets are produced by local craftsmen and help the local economy.
But the souvenir we cherished most from our trip to Lapland were…some potatoes!
The above potatoes are a unique cultivar called Puikulaperunat, or Almond potatoes. They grow very well in Lapland, not only for the characteristics of the soil, but also for the long hours of light in the summer season. In southern territories they are in fact subject to diseases – they have been grown in Lapland since 1700. These potatoes main features are: their shape, (hence their name; in Swedish they are called Mandelpotatis as well); their high starch content, which makes them very floury; their delicate taste.
Puikulaperunat are suitable for steam-cooking. If you intend to boil them, you have to follow some procedure: since they tend to fall apart when cooked, because of their high starch content, you have to turn off the fire as boiling starts and leave them in the hot water for 15 minutes only.
I prepared delicious mushed potatoes with Puikulaperunat, just as I had tasted in Rovaniemi. They are indeed a Lapland delicacy; their delicate flavour accompanies very well not only reindeer meat, but also salmon and some local northern fish like vendace.
Finnish puikula potatoes have a European Union Protected Designation of Origin, under the name of: Lapin Puikula.

chissà che buone!! Mi è venuta fame solo a vederle! La carne di renna non l’ho mai mangiata, che gusto ha? Certo pensare a quei poveri animali viene un po’ tristezza, ma la cucina è così.
